Mature Pecorino Toscano DOP is aged for a minimum of four months. But some wheels can be aged for up to 12 months or more. The aging takes place in natural caves or tufa cellars. Which provide a stable and humid environment that allows the cheese to mature slowly and evenly. The caves’ natural air circulation and constant temperature fluctuations contribute to the development of the cheese’s complex flavor profile.

Is known for its intense, salty flavor with a sharp, lingering bite and hints of spice, pepper. As the cheese ages, the flavors intensify, becoming more complex and well-rounded. The cheese’s texture is crumbly and slightly grainy, adding a delightful contrast to each bite.
