Description
The “Nero” (black) variety, which is a semi-aged cheese, is not currently listed among their lactose-free offerings.
Here’s why I believe this is the case:
Lactose content in Pecorino in Forma Nero: The aging process of Pecorino in Forma Nero, which typically lasts for at least 60 days, likely reduces the lactose content significantly due to the activity of bacteria that break down lactose into lactic acid.
Target audience for lactose-free products: Lactose intolerance is more prevalent with fresh cheeses due to the higher lactose content.
Lactose-free Nero pecorino cheese is a semi-ripe cheese wheel with straight sides.
During the milk processing phase, Lactase is added, a particular enzyme that does not activate in lactose intolerant people.
Pecorino Nero Lactose-free. The cheeses retain the same characteristics of “palate pleasure”, maintaining the delicacy and pleasantness of the other traditional lines that many know and appreciate.
Remember to check labels carefully for lactose-free claims.
